Banana Bread

I can't share the recipe with you, as it's from Rachel Allen's 'Bake' book, which I'm sure is copyright, but I baked my first ever banana loaf at the weekend and it turned out so beautifully that I just had to take a picture and show it to you (because I know you bloggers appreciate a nice-looking loaf as much as I do):

 

I'm not usually a huge fan of bananas, but my fella had bought some and forgotten about them, so they'd gone a bit brown, so he offered them to me in the hope that I would be able to bake something nice with them.  The recipe called for rum-soaked raisins (yuk!) and glacier cherries (only on a bakewell, thanks!), but I skipped them and just added some mixed chopped nuts.  I can confirm that it tastes just as good as it looks.

So, if you have some bananas going brown, dig out your recipe book and rescue them from the dustbin!  And if you're in the market for a great recipe book, 'Bake' has yet to let me down; that Rachel Allen's a marvel.

  1. Yes, that banana bread is a looker for sure. I make Nigella's version, with walnuts and lots of nutmeg.
